2012 Cabernet Shiraz

McLaren Vale

The Cabernet Sauvignon fruit for this wine was sourced from a single hand pruned vineyard on the plains of the McLaren Vale Wine Region.

The fruit was picked at peak flavour ripeness ensuring the right balance of herbaceous, dark berry fruits and savoury tannins before being small pot open – fermented and basket –pressed. The wine then spent three years in a mix of French and American Oak to create a really expressive wine with black currant, blackberry, dark chocolate and ripe tannins.

The wine drinks beautifully now (2014) and it will continue to evolve over the next 6-8 years with careful cellaring.

About Us

The Cradle of Wilk is the first release of our family wine. Our aim is to produce a range of premium Australian wines from various regions which will be driven by fruit quality in any one vintage.

The basic philosophy being that wine begins with climate and different varieties are better suited to particular regions and with access to fruit from a wide range of carefully selected vineyards the future is one that is filled with excitement.

The first wine produced is a powerful 2012 Cabernet Shiraz from the plains of the McLaren Vale region.
